Honestly, the easiest to learn is sheep and wool is an amazing money-maker, though you mention you know about sheep so maybe use the sheep here to gather some serious money. Off to the right side of the map has a small 'farm' with two fields of grass for sheep. The main farm has cows while another one up the road has pigs. If you want something more manageable then the new Lone Oak Farm is just mind-blowing good to get up to speed on each animal type as each animal has its own farm. If you like very big fields then this is a great map for animals. The main farm doesn't contain animals but rather a smaller farm up north which has all 3 animal types and enough storage area for big machinery. It's dead easy to get tons of crops for your animals that you can easily cater to sheep, pigs and cows. The map contains square fields perfect to put workers on (which you'll need as the fields are massive). I played so much on that map before seasons came out. I don't believe it supports seasons which it didn't back a few weeks ago when I deleted my 150+ hours gamesave - seasons is a must for me now. I learned all about taking care of animals on the map 'Who Dat Who Dere Ranch' (I think I spelt it correctly, unsure about Dere).
